A major culinary addition is headed to the downtown San Antonio River Walk as the celebrated Emmer & Rye Hospitality Group prepares to debut its latest dining venture, Barberry. The new concept is scheduled to open later this year inside the historic Sítio El Tropicano hotel, which is currently undergoing an extensive, top-to-bottom transformation.
Targeting an opening window around mid- to late November, the restaurant aims to provide a distinct culinary experience tied directly to the surrounding region. The establishment takes its name from the resilient barberry shrub, known for producing tart, edible berries, and is designed to showcase the identity of the Texas Hill Country through a localized cultural perspective.
The culinary vision is being spearheaded by Evan Allumbaugh, a seasoned California chef serving as Emmer & Rye's hotel food and beverage director, alongside Tavel Bristol-Joseph. Bristol-Joseph serves as the hospitality group’s partner and chief operating officer, widely recognized for his leadership and creative direction behind the Michelin-starred dessert concept Nicosi.
Barberry's culinary program is built around a rigorous regional sourcing standard. Allumbaugh noted that the kitchen will rely entirely on seafood harvested from the Gulf and land animals sourced exclusively from within Texas. The kitchen will pair these proteins with seasonal, market-driven produce obtained directly from local agricultural producers in the greater San Antonio area.
Initial menu development showcases a wide variety of Texas-inspired and technically refined plates. Featured dishes include wagyu beef steak tartare, chicken-fried quail, chilled crab claws, and a vibrant heirloom tomato salad alongside a colorful Stetson chopped salad. The kitchen is also planning handcrafted pasta dishes, such as sweet corn raviole du Dauphiné, noted for its delicate, pillowy shape.
Operational plans call for the 140-seat dining room to debut with daily breakfast and dinner service, with lunch offerings expected to roll out in subsequent phases. The dining experience will be complemented by a curated beverage program overseen by industry veterans. Alicia Schmidt, wine director for Emmer & Rye, will direct the wine portfolio, while Houston Eaves is set to manage the restaurant's dedicated cocktail program.
Beyond the main dining room, Barberry represents the premier component of an expansive food and beverage overhaul managed by Emmer & Rye throughout the entire lodging property. The group is slated to run all on-site culinary operations, integrating elevated hospitality across multiple service touchpoints for hotel guests and local patrons alike.
These additional operations include a full-service casual cafe and coffee bar, extensive in-room dining services, tailored menus for the private Sítio Club, and dedicated beverage and snack offerings designed specifically for the hotel's 5,000-square-foot spa facility.
Another major centerpiece of the development is an outdoor pool bar positioned within what is described as San Antonio's largest hotel pool deck. Designed as a secluded social hub, the expansive amenity deck remains concealed from the primary street-level views and the hotel's recognizable, vintage Vegas-deco neon signage.
The reopening marks a significant milestone for the 64-year-old hospitality landmark. Originally debuting in 1962, the site earned distinction as the very first hotel of its kind along the San Antonio River Walk, quickly establishing itself as a premier gathering spot during the mid-20th century.
Over its decades in operation, the property welcomed high-profile dignitaries and cultural icons, hosting figures such as President Lyndon B. Johnson, country music star Dolly Parton, and members of the Rolling Stones. Despite its storied past, the property gradually drifted from the city's cultural forefront in later decades, ultimately shutting its doors in 2020.
The current revitalization effort is being directed by development firm Trestle Studio. The ongoing project involves a comprehensive, floor-to-ceiling reconstruction of the entire 315-room building, updating the physical infrastructure while preserving key architectural elements of the mid-century landmark.
For Emmer & Rye Hospitality Group, the project builds directly upon substantial momentum in the local market. The organization has established a major presence at San Antonio's Pearl district, operating both Pullman Market and the Mediterranean concept Ladino.
The group's track record includes top-tier critical recognition. Within Pullman Market, the concepts Nicosi and Isidore have each been awarded one Michelin star, while Mezquite at Pullman and Ladino have both earned Michelin Bib Gourmand honors. The arrival of Barberry is set to expand that footprint and add high-profile dining to the revitalized river corridor.
